Seriously, this was beyond yum and into heavenly. So easy to make on the grill.
Arugula, Caramelized Onion, Goat Cheese and Red Grape Pizza
- 2 Tbsp olive oil, plus more for brushing
- 1 Tbsp butter
- 1 onion, sliced thin
- 1 tsp sugar (optional)
- 2 cups arugula
- salt and pepper
- 1/2 of a large pizza dough (from your favorite pizzeria - NOT from the supermarket!)
- 1/2 cup goat cheese, sliced
- 1/2 cup red grapes, sliced
Heat the olive oil and butter in a small pan. Saute the sliced onions until translucent and soft. Sprinkle with sugar if desired. Continue over medium heat until onions are caramelized. Remove from the pan.
Add arugula to same pan. Cook over medium heat until arugula is wilted, and remove from burner.
Stretch the pizza dough out on a floured pizza board (or cookie tray with no sides). No need to make a perfectly round pizza... extra points for irregular shapes in these pizzas! Brush with olive oil. Slide the dough onto a hot grill and cook until browned on both sides.
Remove from the grill. Immediately cover pizza with wilted arugula, sliced goat cheese, sliced grapes and caramelized onions. Let the cheese melt slightly before slicing. Try to have just one piece... I dare you.
