Challah French Toast with Bananas Foster Spread

Never pass up leftover challah.

  • 2 Tbsp butter
  • 1 loaf challah, sliced thickly
  • 5 eggs
  • 1/4 cup milk
  • 1 Tbsp vanilla
  • 1 tsp cinnamon
  • 2 bananas
  • 2 Tbsp butter
  • 2 Tbsp brown sugar
  • 1 Tbsp rum
Heat butter in frying pan over medium-low heat.
Combine eggs, milk, vanilla and cinnamon in a large flat pan. Dip slice of challah into egg mixture and leave for a few minutes. Turn over and let it soak up some more egg. Transfer to pan and fry until browned.  Repeat with other slices.

Slice bananas in half lengthwise. Melt butter in pan and stir in brown sugar and rum. Saute banana halves in mixture until browned. Blend using a hand mixer until smooth.
