Yes we love these! Almost the same as the Chicken, Bacon, Cheddar and Avocado Quesadilla, but cylindrical instead of flat!
- 6 strips bacon
- 1 avocado, chopped into small pieces
- 1/2 red onion, chopped
- 1 cup sharp cheddar cheese, shredded
- 2 chicken breasts
- 8 fajita-sized flour tortillas
- 2 Tbsp olive oil
Put bacon into small frying pan and cook until crisp. Crumble. Keep the fat in the pan.
Sautee onions in bacon fat until soft and translucent. Set aside.
Sear each chicken breast in bacon fat, 2 minutes on each side, then bake at 350 until cooked through. Chop into small pieces.
Toss together crumbled bacon, chopped avocado, chopped chicken, sauteed onion, and shredded cheddar.
Add olive oil to pan and put over medium heat. Place one tortilla in pan. Sprinkle filling on tortilla. Place second tortilla on top. Place smaller lid on tortilla to keep it weighed down. When bottom is ready, flip using spatula (or two) and cook other side.
Remove from pan and cut into slices. Repeat for other 3 quesadillas. Serve with salsa.
