Cranberry Salsa

I’m not the biggest fan of cranberry sauce, but I love salsa. This called to me in so many ways! Throw the ingredients together until it tastes good to you. That’s how I always make salsa. I preferred it with a lot of sugar in order to counter the bitterness of the cranberries, though. It went so well with the cranberry-glazed beer-can chicken made on our grill!

Recipe

Cranberry Salsa

  • Cranberries, 1 bag
  • Cilantro, a bunch
  • Jalapeno, a little
  • Lime, a few squeezes
  • Scallion, some chopped
  • Salt, a little
  • Pepper, a little
  • Sugar, as desired

Combine in a saucepan and heat until cranberries soften and begin to burst. Cool in refrigerator for at least an hour.
