Kielbasa Tortellini Soup


We all got flu shots this week – but now the daughter is sick. I don’t know whether it’s a reaction to the injection, or if she got the flu before the vaccine took effect. Either way, she wanted to eat nothing but soup, so I threw together this simple hearty meal with ingredients that were already in the fridge. It made the girl feel better, and was yummy for the whole family!


Kielbasa Tortellini Soup

  • 1 Tbsp olive oil
  • 1 red onion, chopped
  • 1 Tbsp garlic, minced
  • 1 kielbasa, sliced
  • 1 Tbsp spice mix, such as thyme, white pepper and salt
  • 6 cups chicken stock
  • 2 cups frozen chicken tortellini
  • 1 cup frozen corn kernels
  • 1 cup chopped kale
  • grated parmesan cheese, optional

Heat olive oil in soup pot. Saute onions and garlic until soft. Add kielbasa to pot with the spice mix and brown, stirring occasionally. Add all of the chicken stock and heat until boiling. Add frozen tortellini and reduce heat to medium. Cook tortellini in boiling soup. Add corn kernels and chopped kale and heat through. Serve topped with some grated parmesan cheese.
