Mini Pecan Pie

I like pie. I really do. ESPECIALLY pecan pie. But I never want a whole piece… it’s way too filling. ┬áTiny pies to the rescue!

Observant fans will see the ever-popular chocolate marshmallow cookies in the back of the photo.

Makes: 24. Preheat oven to 325.

Filling

  • 1/2 stick butter, melted
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup corn syrup
  • 2 eggs, beaten
  • pinch of salt
  • 1 cup chopped pecans

Combine all filling ingredients in a medium bowl.

Crust

  • 1 oz cream cheese, softened
  • 1 stick butter, softened
  • 1 cup flour

Combine crust ingredients. This works best with your hands, in my opinion. Form into small circles, about the size of a quarter, and press into mini muffin tins.

Bake at 325 for 20 min.
