I prepared these yummy scallops for a dinner party. The tangerine goes great with the pistachio crust! And yes, I did double duty with this recipe … we decided to turn it into a Battle: YUM challenge. I can’t wait to see what the others come up with using the same ingredients!

Pistachio-Crusted Scallop in a Tasting Spoon with Honey Tangerine Vinaigrette

For the crusted scallops
  • 6 scallops
  • 1 cup pistachios, shelled
  • salt and pepper
  • 2 Tbsp unsalted butter, softened
  • 2 Tbsp olive oil
  • 2 Tbsp butter
For the vinaigrette
  • 2 honey tangerines, juiced
  • 1 Tbsp chopped shallot
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • salt and pepper
