Sausage Dinner with Cauliflower and Potatoes

I threw together this dinner with random leftovers found in the fridge and pantry. You can definitely call this dish eclectic! The stark differences in ingredients made me hold my breath, hoping that it would be eaten. It actually was REALLY tasty and disappeared quickly.

  • 1 Tbsp olive oil
  • 4 sausages, cut up
  • 1 cup cauliflower florets
  • 1 onion, chopped
  • 1 potato, peeled and cubed
  • 1 Tbsp flour
  • 1 Tbsp Penzey‘s Bavarian Seasoning (mustard seed, rosemary, garlic, thyme)
  • salt and white pepper to taste
  • 1-1/2 cups chicken broth
  • 1/2 cup garlic hummus
  • cilantro leaves
  • 1 tsp sugar
  • 2 pieces naan bread, warmed

Saute sausage, onion, cauliflower and potatoes in the olive oil for a few minutes, stirring so sausage is cooked on all sides. Onions will be translucent, but cauliflower and potato will not be fully cooked yet.  Sprinkle with flour and seasoning mix and stir. Pour in chicken broth and cover, simmering over medium heat for 10-15 minutes until vegetables are soft and sauce is thickened. Stir in hummus, cilantro and sugar and stir. Heat through. Serve over naan.
