My daughter got a fun mini whoopie pie pan as a gift this year. I’m not sure whether she was excited about it, but I was. I decided to make some jellies and this pan was absolutely perfect for this recipe. Just the right size and shape for yummy jelly treats which look so very similar to my absolute favorite candies!
I made my jellies strawberry-lemonade flavored for two reasons:
- Yum. Duh.
- The only juice I had in the house at the time was lemon juice.
I’m sure that this recipe would work great with any choice of juice and jam, though!
Strawberry Lemonade Jellies
- 1/3 cup fruit juice, divided (lemon juice, for example)
- 1 packet powdered gelatin
- 2/3 cup sugar
- 1/2 cup jam (strawberry jam, for example)
- 1/2 cup lemonade mix, or fine sugar
Pour about half of the juice into a small cup or bowl. Sprinkle with the gelatin. Set aside.
Put remaining juice into a small saucepan. Bring to a boil, reduce heat to medium and add sugar. Continue slow boil until sugar is dissolved. Add jam and stir until combined. Bring to boil again. Add gelatin mixture and stir to combine.
Pour mixture through a fine strainer into mini whoopie pie pan. Refrigerate for at least three hours.
Put fine sugar into a shallow bowl. Remove jellies from pan and coat in sugar.
